Waffle Corn Fritters

Ingredients:

METHOD

1. Mix Ingredients
Combine all ingredients in a large bowl. Season with salt and freshly ground black pepper. Let the mixture sit for 5 minutes while the waffle maker heats up.

2. Prepare Waffle Maker
Lightly grease the waffle maker. Spoon in about 1 cup of the corn mixture (depending on waffle maker size) — just enough to cover the grid.

3. Cook
Close the lid and cook until the indicator light turns green or waffles are golden and crisp.

4. Serve
Serve hot with your choice of toppings.

Suggested Toppings:

Goat’s cheese, avocado, and chilli oil
Poached eggs and/or bacon
Fresh herbs like coriander, chives, basil
Sour cream mixed with sweet chilli sauce
